Baked spiced chicken thighs with yoghurt dip

A really quick and easy baked chicken recipe. Marinating the chicken thighs in yoghurt and spices makes it really tender. You could cook this in either an air fryer or oven. I allow 2 chicken thighs per person - but adapt for different portion sizes as needed.

 

ingredients

serves 4

 

8 skinless and boneless chicken thighs
1 tablespoon of Greek yoghurt
1 heaped teaspoon of ground cumin
1 heaped teaspoon turmeric powder
1 heaped teaspoon of ground coriander
1 heaped teaspoon garlic powder
1 heaped teaspoon paprika
1/2 teaspoon of cayenne pepper, more if you like heat.

Yoghurt dip
3 tablespoon of Greek yoghurt
3cm piece of cucumber, grated
1 tablespoon of mint leaves, chopped
Small pinch of sea salt


To serve: rice and green vegetables

 

method

prep time: 40 mins

 
  • Add the chicken thighs to a baking dish.

  • Add the yoghurt and spices and stir to combine.

  • Leave to marinate for between 1-6 hours. The longer you marinade the more tender the chicken.

  • When ready to cook preheat the oven to 180°C and add the baking dish. Cook for 30-40 minutes. For the air fryer cook on 200°C for 20 mins.

  • While the chicken is cooking add the ingredients for the yoghurt dip to a bowl and stir together.

  • Serve the baked chicken with the yoghurt dip, some rice and green vegetables.

Marinading chicken in yoghurt means that the active bacteria and lactic acids in the yoghurt starts to break down the protein making it super tender.
