Broccoli, edamame and chickpea salad
A high protein salad with the added benefit of broccoli, a cruciferous vegetable that supports liver and hormone health. I always stock green beans and edamame beans in the freezer as quick options to add to dishes.
ingredients
serves 1
100g broccoli, cut into florets
100g green beans
100g edamame beans
200g chickpeas
100g feta cheese
1/2 avocado
1 tbsp of mixed seeds such as sunflower and pumpkin
method
prep time: 30 mins
Preheat oven to 180°C.
Add the broccoli, green beans and edamame to a steamer and steam until cooked.
While the greens are cooking place the chickpeas in a bowl and cover with a little olive oil and 1/2 tsp of paprika. Place these in a tray in the preheated oven or an air fryer to crisp up.
When the greens and chickpeas are cooked assemble all the ingredients into a bowl.
Serve with a drizzle of French Dijon dressing.
