Hot honey & lime chicken bowl
This chicken recipe is fabulous for so many reasons; the chicken and marinade are super quick and easy to make and you prepare as much of this as you like for dinner and cook extra for a couple of lunches. It can be eaten hot with fluffy rice, sweetcorn, a little mango avocado salsa or cold with green leaves and colourful chopped veggies or crudités. My son also pointed out he would serve it in a wrap with guacamole, salad, tomatoes and red onions! You’ve got to try it!
Ingredients
Serves 3-4
Chicken & marinade:
8 chicken thighs, skinless and boneless
3 cloves garlic, minced
2 tbsp hot honey or honey
3 tbsp soy sauce or Tamari sauce
Juice of 2 limes
2 tsp smoked paprika
1 tsp onion powder
1 tsp dried oregano
Salt
Black pepper
Suggestions to serve
Fluffy basmati rice
Sautéed or barbecue sweetcorn
Cucumber
Red onions
Lime wedges
Fresh coriander
Sriracha
Or you could also serve with a nice little avocado mango salsa
Method
This chicken once marinated can be pan fried or cooked in the air fryer.
Add the chicken thighs to a large bowl
Literally add all the marinade ingredients on it and mix well.
Set to rest in the fridge for 1hr minimum.
Cook well with chosen method.
Pan fried: medium/high heat until cooked through. Flip half way through cooking.
Air fryer: 200 C for about 15 minutes. Flip half way through.
Serve with your choice of colourful veggies or salad and some rice.
