warm winter glow high protein bowl
A warming winter bowl perfect for lunch on those days when you just can’t get warm. Full of robust flavour and textures. A high protein and high fibre salad with 25g of protein and a decent amount of fibre too from the kale..
ingredients
serves 1
100g butternut squash cubed
110g chickpeas
1 spoon harissa paste
large handful of kale, chopped
75g cooked quinoa
2 Tbsp pomegranate seeds / 1/2 fresh pomegranate
80g feta cheese
method
Preheat the oven to 200°C.
Add the chickpeas to a large roasting dish.
Peel the butternut squash and cut into small squares and place in the dish with the chickpeas.
Coat in the harissa paste.
Cook in the oven for 20-30 minutes.
Cook the quinoa according to the packet instructions or use pre-cooked quinoa.
Chop the kale finely and add to a salad bowl..
At the end of the cooking time take the squash and chickpeas out of the oven and stir in the cooked quinoa and add to the salad bowl.
Halve the pomegranate and hold over the bowl while you bang the skin with a wooden spoon to release the seeds and the juice.
Now stir everything together, stir through the feta cheese and serve.
