raspberry and chia pots
These little chia pots are so easy to make and are an ideal quick breakfast or even a pudding. My son likes one for breakfast and he mixes with some homemade granola or even just some nuts and seeds. They are also delicious with blueberries or blackberries.
Ingredients
150g raspberries
400ml coconut milk
4 tablespoons chia seeds
Method
Blitz the raspberries and coconut milk together in a blender until smooth.
Stir in the chia seeds and then pour into empty jars or pots.
Place in the fridge and leave overnight until set.

Chia seeds are very rich in fibre, healthy omega 3 fats, antioxidants and protein. Chia seeds are also an excellent source of many minerals – manganese, copper, selenium, magnesium and phosphorus.
