One pan salmon with harissa tahini dressing
A perfect quick, easy and very tasty one pan salmon dish packed with flavour. The main ingredients are very simple, but elevated with a gorgeous harissa and tahini dressing which would also work well with chicken. You can swap the vegetables with the seasons too. Easy to make for 2 or for a larger crowd. It is nutritious enough to serve on its own, but you could also serve with lentils, brown rice or quinoa.

2 salmon fillets
300g tenderstem broccoli (cleaned and lightly steamed)
200g brussel sprouts (prepped and lightly steamed)
1 cloves garlic, finely chopped
Large handful of walnuts, roughly chopped
Sesame seeds to sprinkle
Optional: Lentils, brown rice or quinoa to serve.
Dressing:
Olive oil 1tbsp
Water 2 tbsp
Tahini 3 tbsp
1 heaped teaspoon harissa paste
Juice of 1/2 lemon
Method
In a jar, add all the dressing ingredients and mix well, set aside.
Clean, prep and lightly steam the veggies and set aside.
In a baking pan add a good splash of olive oil.
Add the steamed broccoli and sprouts.
Sprinkle the garlic.
Add the walnuts.
Add 2/3 of the dressing over the veggies with a spoon.
Top with salmon fillets.
Spread the remaining dressing on top of the salmon.
Sprinkle with sesame seeds and chilli flakes.
Slide in the oven for about 20 minutes or until salmon is cooked to your liking.
I like to eat it on its own, but you could serve with a side of lentils, brown rice or quinoa.
The Health Boost Tip
For those wanting other options, you can swap for chicken. If interested in a vegetarian version this dressing also works well with tofu. You could also add chickpeas.
