Zingy ginger and coriander turkey burgers

Turkey mince is a wonderful lean and affordable meat to use. It can be very blend and therefore has to be dressed! This burger is so tasty and easy to make ahead. This could also be made into meatballs and used in a ramen bowl. Fresh ginger, coriander, lime and spring onions are a match made in heaven. Add a little chilli if you like it hot.

 

ingredients

makes 3-4 burgers

 

500g turkey thigh mince
3 cm fresh ginger root, peeled and grated
1 clove garlic, crushed
25g fresh coriander, finely chopped
25g fresh mint, leaves finely chopped, plus extra to garnish
5 spring onions, finely chopped (3 for the burgers and 2 to serve)

 

method

prep time: 5mins
cook time: 25-30mins

 
  • Preheat oven to 180°C or use an airfryer

  • Place all the ingredients for the burgers (except the oil) into a large bowl.

  • Add some seasoning, mix together using your hands and divide the mixture into 3 or 4. Shape into burgers and set aside.

  • While you prepare the sides, add 2tbsp of oil to a large non-stick frying pan on a medium to low heat and cook the burgers for 5 mins on each side, until nice and golden. Remove from the pan and add them to the oven tray (with veggies if you’d like)

 

the health boost tip

In my house 500g turkey mince makes 3 burgers. With 27g protein per 100g of turkey mince, each portion then has 45g protein which can be topped up with some plant based protein if needed. There are 3 plants in the burger and I would serve with either 3 veggies or a mixed salad for fibre.
