broad bean & mint dip
At the Health Boost we believe that the sure way to sustaining healthy eating on a long term basis is to keep it simple. Few ingredients, inspired by the seasons and available locally. This dip is just that and will make the perfect offering with summer drinks, barbecues served with warm flat breads or corn tortillas.
ingredients
400g fresh broad beans (shelled weight)
Large handful fresh mint
3 tablespoon Greek yoghurt
Salt and pepper
Juice of 1/2 lemon (optional)
method
- Bring a large pan of water to the boil. Add the broad beans and cook until they feel tender. Drain and rinse with cold water
- In a food processor, blitz the broad beans, mint leaves and Greek yoghurt, salt and pepper
- Transfer to a serving bowl and squeeze a little lemon juice (optional)
The Health Boost Tip
This is the easiest quickest green summer dip! Broad beans are not just delicious they are rich in vitamin C and folate and have useful amounts of calcium and protein. This helps make them anti-inflammatory and a great reason to include them in a healthy diet. In some parts of the world they are known as fava beans.
