5 nutritious winter warming salads
A salad is normally associated with spring and summer, but it doesn’t have to be that way. At The Health Boost we enjoy a salad all year round - it’s a great way to pack in your vegetables at lunch. However, the key to a winter salad is to incorporate some warm elements. This could be some warm roasted vegetables, just cooked lentils or quinoa or some heat with a spice such as harissa. A salad doesn’t have to be time consuming to prepare either. Save some roasted veg or quinoa from the night before or batch cook on a Sunday evening for the week ahead. Warm butternut squash and lentil salad
This is one of my favourite winter salads. Roasted squash, lentils and hearty kale combined with a spicy dressing. It’s a sure winter warmer!
Beetroot, lentil and feta salad
Beetroot, lentils and feta cheese are three flavours that are made for each other. If you use ready cooked lentils then warm them for a few minutes for the warm element to this salad.
Winter kale, chickpea and harissa salad bowl
There are many warm elements to this hearty salad - roasted sweet potato, squash and quinoa along with a punchy harissa paste for added warmth.
Quinoa, kale and black bean salad
The spicy dressing with ginger and chilli really lift this salad and the quinoa is a warm element. This hearty lunch is an ideal lunch to take to work as it travels well.
Shredded brussel sprout and chestnut salad
We couldn’t get through winter without a fresh sprout salad. The chilli flakes provide the warmth - but you could heat the chestnuts up for a few minutes for even more warmth.
